Based on available records and family history by Suzanne Cisco, it appears that she was listed as a son named Christian in the 1860 census in error.
Listed as Lena in 1870 census with her husband. 1900 census says her parents were both born in Germany. Also that she had 6 children, 4 of whom were still living.
In 1910, she is listed as a widow (54, PA) with her daughters Margaret and Elizabeth living with her, of her 4 living children. Also in 1920, except that she is listed as Chrisdena Denk, again with her 2 daughters.
In 1930 she is listed in Honesdale as Christina Dink (indexed as Dack) with her daughters Margaret and Elizabeth, as well as granddaughter Eleanor C. Dink (16, PA).

He was age 8 on 9 Sept 1850, age17 on 2 Jun 1860, age 28 on 28 July 1870, 38 in Jun 1880, then 59 on 9 Jun 1900 census records. However the 1900 census gives his birth as Nov 1840, but I have used 1841 based on the earlier data.
Listed in 1870 census with his wife, daughter Katie along with his brother and mother. His name is spelled Daub? In 1880 he is listed as a carpenter with his wife and daughters Catherine, Margaret and Lizzia.
Listed as Joseph Dink in 1900, with his wife, children Elizabeth and Joseph, as well as John & Catherine Sporer (Sporr?) his in-laws. It shows him as married 31 years with 6 children, 4 of whom were living at the time. He is listed as a carpenter. It shows that he immigrated to the U.S. in 1845 and was naturalized. The land from his mother was 1/4 Ac for $400.
Following his death in 1907, the deed transferring his land lists his children and son George's children as heirs of the 1/4 Acre.
